DAY BEFORE LAYER SALAD | |
1 head cauliflower 1-2 heads lettuce 1 med. onion, chopped 1 lb. bacon, fried and drained 1/2 c. Parmesan cheese 1/4 c. sugar Mayonnaise In large bowl make layers starting with lettuce, cauliflower, onions, and bacon. (I use my food processor to chop my cauliflower.) Sprinkle the cheese over bacon, followed by sugar. Cover the top from side to side with mayonnaise. Let stand in refrigerator overnight. Just before serving, stir well. The overnight gives the cheese, sugar, and mayonnaise time to blend. |

I learned to make this "secret" recipe at Granny's Country Cookin' in Paducah, Kentucky over 35 years ago when I worked there in high school. It was advertised as a supposed secret recipe of the Driver family who owned Granny's, several of the first Kentucky Fried Chicken franchises, and a couple of western wear stores.
I was craving it and couldn't remember it for certain. Apparently nothing is secret after the advent of the internet. I put in overnight salad and got 20 plus results. some with peas and broccoli.
But this is the one I remember from both ingredients and procedure. Try it. You can't really mess it up and it is sooooo good.
