SEASONED SCALLOPS 
1 tbsp. olive or vegetable oil
2 tbsp. butter
2 tbsp. lemon juice
1/4 c. seasoned bread crumbs
3 tbsp. grated Parmesan or Romano cheese
1 tsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
1 lb. fresh scallops

Heat oil and butter in a small baking dish. Add lemon juice, bread crumbs, cheese, parsley, salt and pepper. Add scallops; toss to coat with mixture. Bake uncovered at 350 degrees for 20 minutes. Serves 4.
