BROCCOLI CASSEROLE 
1 small onion, chopped
1 pkg. chopped broccoli, cooked as pkg. directions
1/2 stick butter
1 c. Minute rice, cooked as directed
1 c. celery
1 can cream of chicken or mushroom soup
1/2 c. water
1/2 c. milk
1 1/2 c. grated American cheese
1 c. crushed Ritz crackers

Sauté onion and celery in butter. Add all ingredients. Mix well. Place in casserole dish. Top with crackers.

Bake for 30 to 45 minutes at 350°F.

Note: Pepperidge Farm stuffing mix can be used instead of crackers.
