Preheat oven to 375 degrees. Season meat as desired. Place meat fat side up in shallow roasting pan. Do not cover. Do not add water.
Put roast in oven; bake for 1 hour. Turn off oven, but do not open oven door at any time until beef is ready to serve.
Regardless of length of time the meat has been in oven, 30 to 40 minutes before serving, turn oven on again to 375 degrees. Bake for 30 to 40 minutes. Now open oven door. Meat will be brown and crisp on outside and beautiful pink all the way through - juicy and medium rare.
