GARDEN DELIGHT 
2 tbsp. melted butter
1 1/2 c. uncooked brown rice
2 lg. chopped onions
3 c. vegetable broth
3 tbsp. soy sauce
1/2 tsp. thyme
1 tsp. salt
1 can sliced water chestnuts, drained
3 tbsp. cooking oil
2 cloves minced garlic
1 bunch broccoli flowerettes
1 bunch cauliflower flowerettes
2 red bell peppers, chopped
1 c. cashews
8 oz. shredded Cheddar cheese

In large baking dish or casserole dish mix butter, rice, water chestnuts, broth, and soy sauce together by hand. Bake for 40 minutes at 350 degrees.

Heat cooking oil in saute or frying pan. Saute onions, garlic, pepper, broccoli, and cauliflower for 5 minutes. After rice mixture has baked for 40 minutes, remove it from the oven and mix in thyme and salt.
