9 BEAN SOUP 
2 c. bean mix
2 qt. water
1 lb. ham, diced
1 lg. onion, chopped
1 clove garlic, minced
1/2-3/4 tsp. salt
1 (16 oz.) can tomatoes, undrained, chopped
1 (10 oz.) can Ro-Tel tomatoes, undrained

Sort and wash bean mix. Place in Dutch oven. Cover with water, 2" above beans. Let soak overnight. Drain beans. Add next 5 ingredients. Cover, bring to boil. Reduce heat and simmer 1 to 1 1/2 hours or until beans are tender. Add remaining ingredients, simmer 15 minutes, stirring occasionally.
