SEVEN BEAN SOUP 
2 c. mixed dry beans
2 qt. water
1 ham bone
1 lg. onion, chopped
1 clove garlic, minced
1 tsp. chili powder
1 (28 oz.) can tomatoes
1-2 tbsp. lemon juice

Use at least 7 varieties of beans, great northern, navy, black, garbanzo, pinto, red beans, green split peas, lentils. Rinse beans, soak overnight. Drain and rinse very well in the morning. Now add bone and rest of ingredients. Simmer until beans are tender.

NOTE: It is very important to rinse beans thoroughly after soaking.
