ROBERTA'S BISCOTTI 
7 eggs
1 1/2 c. sugar
1 c. oil
2 tsp. vanillatsp. anise flavoring
4 c. flour
2 tsp. baking powder
1 tsp. salt

Beat eggs until light and fluffy, add sugar gradually and beat well. Add oil and keep beating. Mix in vanilla and anise. Add dry ingredients. Blend well. Pour into 2 greased 9 x 13 inch pans.

Bake 350 degrees for 15 minute the 325 degrees for 15 minutes. Remove from pans, while warm, by turning over onto cookie sheets. Slice into 4 1/2 x 1 inches. Lay on cookie sheet. Toast both sides, until light brown. Serve buttered or plain with fresh coffee.
