CHOCOLATE PEANUT BUTTER COOKIES 
1 lb. Reese's peanut butter cups
4 oz. semi-sweet chocolate chips (optional)
1 c. butter, softened
1/2 c. sugar
1 tsp. vanilla extract
2 lg. eggs
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. firmly packed brown sugar

Cut peanut butter cups into small pieces (approximately 1/3 inch to a side). Freeze the pieces! Preheat oven to 375 degrees. Combine flour, baking soda and salt in small bowl. In another bowl (large) combine butter, sugars and vanilla extract until mixture is creamy. Beat in eggs. Gradually mix in flour, etc. Take peanut butter pieces from freezer and mix in (if desired add semi- sweet chocolate chips). Drop by rounded spoonfuls on ungreased cookie sheets (1 inch apart). Bake for 10 or 11 minutes. Cool before eating.
