WEST COAST CHICKEN 
2 tsp. salt
1/4 tsp. black pepper
1 c. frozen orange juice concentrate, thawed
1/3 c. butter, melted
2 tsp. ground ginger
4 tsp. soy sauce

Combine above ingredients. Grease two 11 x 7 inch baking pans well with vegetable oil. Place 5 pounds chicken thighs, skinned, in single layer in pans. Baste well with sauce. Cover; refrigerate overnight. Bake, uncovered, at 350 degrees for about 1 hour, basting with sauce once during cooking.
