VEGETABLES WITH COCONUT 
3 tbsp. ground coconut
1 clove garlic, chopped
1 med. or lg. tomato, chopped
1 tsp. fennel seeds
1/4 c. water
1 tsp. vegetable oil
1 tsp. mustard seeds
1 lb. uncooked vegetables of any kind you like, chopped
1 lg. onion, minced
1/2 tsp. chili powder (more or less according to taste)
1/4 tsp. turmeric powder
1/2 tsp. ginger powder
1 tsp. cardamom powder or coriander leaves
Salt to taste

Mix coconut, garlic, tomato, fennel seeds together, and grind with 1/4 cup water into a smooth paste. Set aside.

Heat a pan; add oil and bring to boil. Fry mustard seeds and allow them to crackle; add onion and cook until brown. Add vegetables and fry for 5 minutes.

Add ginger, chili and turmeric powder and mix well. Add 2 cups water, salt, and cook vegetables until tender. Add ground paste, cook 10 minutes and then add cardamom powder. Serve hot with bread or rice.
