COCONUT CUSTARD PIE | |
4 eggs 1/2 c. sugar 1 tsp. vanilla 1/8 tsp. salt 2 1/2 c. milk 1/2 c. coconut 1 pastry shell Bake pie shell until lightly golden. FILLING: Beat eggs until combined. Stir in sugar, vanilla and salt. Gradually stir in milk and coconut; mix well. Place pastry shell into a large baking dish. Pour filling into shell. Sprinkle with nutmeg, cover edge of pie with foil and bake 25 minutes. Remove foil and bake 15 to 20 minutes. |
