SALLY KUBICK'S SPAETZLE | |
2 c. flour 2 eggs 1/2 c. milk (to make a med. dough) Salt 3 qts. water 1/2 tsp. baking powder 4 oz. butter Mix the flour with the eggs, milk, salt and baking powder. Beat until light and bubbly. Set aside. Bring 3 quarts water to a boil with 1 tablespoon salt. Drop the dough into the boiling water a teaspoonful at a time. When the dumplings rise to the surface, taste one to make sure they're done. When they are done, remove them with a slotted spoon and rinse lightly with cold water. Melt the butter in the top of a double boiler. Add the drained dumplings and mix well with two forks. Keep them warm over hot water and serve separately with stew or paprikash. |
