SOFT LEMON COOKIES 
1 1/4 c. sugar
1 c. butter
1/2 tsp. salt
1 egg
1 c. buttermilk
1 tsp. baking soda
2 tsp. lemon extract
3 to 4 c. flour

Combine sugar, butter, salt and blend thoroughly. Add remaining ingredients; mix well. Roll out small portion of dough at a time; cut with cutter.

Place on cookie sheet, sprinkle sugar over top of cookies. Bake at 350 degrees for 8 minutes.

These are quite good. They ended up more like lemon scones, but I tend to drop 'big'. The taste, texture, and easy recipe will make this a regular addition to my kitchen!
