TOMATO FRITTERS 
2 c. cooked tomatoes
2 eggs
1 1/2 c. cracker crumbs
1 sm. onion
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 tsp. sugar
3 tbsp. fat (butter)

Beat eggs and add tomatoes, seasoning and cracker crumbs. Beat eggs and add to mixture. Stir until well blended. Drop mixture from a spoon into hot fat. Fry until brown on both sides.
