SWEET POTATO CASSEROLE 
2 lg. sweet potatoes (enough to make 2 1/2 c. mashed potatoes)
1/2 stick butter
3 eggs, beaten
1 c. sugar
1 tsp. vanilla
1 tbsp. flour
1 c. half and half
Plain milk

Boil sweet potatoes until tender and mash. While hot, add butter; stir until melted. Beat eggs and add sugar, vanilla and flour to eggs. Mix well. Stir in half and half. Stir this mixture into the mashed sweet potatoes. Add enough plain milk to fill a 2 quart casserole. Spray the dish with Pam. Taste the custard before baking to be sure it is sweet enough. Bake at 375 degrees for 40 minutes.
