MINI CHEESECAKES 
Vanilla wafers
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
3 eggs
1/2 tsp. vanilla
1/2 tsp. lemon juice

Preheat oven to 350 degrees. Line cupcake pans with papers. Place a vanilla wafer in each, flat side down. With electric mixer, cream 2 packages of cream cheese until smooth. Beat in sugar, eggs, vanilla and lemon juice, mix until creamy. Fill each muffin cup 1/2 full with batter. Bake 20 minutes. Immediately remove from muffin tins. Place on tray; refrigerate. When cool, top with favorite topping. Cherry or blueberry pie filling; fresh strawberries, or 1 cup sour cream and 1/2 cup sugar. Makes 20 to 24 cakes.
