RHUBARB CAKE 
1 c. sugar
1 egg
2 tbsp. melted butter
1 c. buttermilk or sour milk
1/2 tsp. salt
1/2 tsp. baking soda
1 tbsp. baking powder
2 c. flour
1 c. rhubarb or more

TOPPING:

2 tbsp. melted butter
1/2 c. sugar

VANILLA SAUCE:

1 or 1/2 c. sugar
1/2 c. butter
1/2 c. evaporated milk

Blend first 3 ingredients together; add buttermilk or sour milk. Stir in salt, baking soda, and baking powder and flour. Add and stir in rhubarb. Pour into 9 inch square pan or other. Add topping, blended together. Bake at 350 degrees for 45 minutes.

Bring vanilla sauce to a boil for 1 minute stirring constantly. Remove from heat. Can be poured over warm cake or on separate serving. Top with fresh strawberries if desired.
