FLAKY PIE PASTRY 
1 1/2 c. sifted flour
1/2 tsp. salt
1 1/2 sticks butter
4 tbsp. ice water

Sift the flour and salt into a bowl. Cut in the butter with pastry blender until consistency is like coarse cornmeal. Add just enough ice water, tossing with a fork, to form a ball. Chill 20 minutes.

Divide the dough in half and roll out very thin on a lightly floured surface. Fit 1 piece into a 9 inch pie plate. Fill as desired and cover with the second piece; seal the edges with a little water and cut a few gashes in the top. bake as directed.
