SQUASH PATTIES 
6-8 yellow squash, grated
1 onion, chopped
1 c. self-rising flour
1 c. grated Cheddar cheese
1 1/2 c. cornmeal
Pepper to taste

Place grated squash and onion in colander and sprinkle with salt. Let sit until all moisture has drained. Combine with remaining ingredients and mix well. Form into patties and fry turning once until golden brown.
