FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes (hot or cold, instant or regular)
1 1/2 pkg. (12 oz.) cream cheese, room temperature
2 eggs
2 tbsp. flour

Season to your taste: You can use salt, pepper, garlic salt, onion salt or celery salt, and French fried onions.

Put potatoes in large mixing bowl. Add cream cheese, eggs, flour and mix till blended. Then mix at high speed until fluffy and light. Add seasoning to taste. Spoon into greased 9 inch square pan. You can refrigerate at this point. Bake uncovered for about 30 to 45 minutes at 300 degrees. Last 15 minutes, distribute 1 can (3 1/2 oz.) French fried onion rings over top. Serve 4 to 6.
