PERSIMMON PUDDING 
1 qt. persimmons
3 eggs
1 1/4 c. sugar
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. melted butter
2 1/2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1 c. raisins or nuts (optional)

Put persimmons through colander; yields about 2 cups. Beat in 3 eggs. Add all ingredients; mix well. Bake in 9x9 inch dish in moderate oven (325 degrees) about 1 hour or until firm. Serve with whipped cream or hard sauce. Serves 8.
