OKRA AND TOMATO SALAD 
1 c. cooked cooked okra OR
1 (10 oz.) pkg. frozen whole, cooked and drained
2 lg. tomatoes, cubed
1 tsp. lemon juice
1/2 tsp. salt
1/2 tsp. chili powder
1/4 tsp. pepper
1 tsp. chopped parsley
New Orleans French dressing (below)
Salad greens
1 hard cooked egg, finely chopped

1. Cut okra crosswise into 1 inch slices

2. In bowl, combine okra, tomatoes, lemon juice, salt, chili powder, pepper and parsley. Chill while making dressing.

3. Add about half the dressing to okra mixture; blend well. Chill about 1 hour.

4. Arrange on salad greens; garnish with egg.

5. Pass rest of dressing. Makes 3 to 4 servings.
