GRANDMA LYDA'S HASHED BROWN
POTATOES
 
3 tbsp. flour
1 tbsp. minced onion
1/4 c. light cream or milk
1 tsp. salt
Speck of pepper
3 c. finely chopped and cooked potatoes
3 tbsp. shortening

Mix flour, onion, cream, salt, and pepper until smooth in mixing bowl. Add potatoes and fold in until potatoes are coated with flour mixture. Melt shortening in skillet. Empty potatoes in skillet and pack down firmly, leaving a separation about 1/4 inch wide down through center of potatoes. Cook 15 minutes. Loosen potatoes around sides of pan. Fold one side over the other and invert on serving plate.
