BROCCOLI CASSEROLE 
2 pkgs. frozen broccoli or 2 bunches fresh, parboiled 3 minutes
2 eggs
2 tbsp. onion, minced
1 can cream of mushroom soup
1 c. mayonnaise
1 c. Cheddar cheese, grated
1 1/2 c. ham, cubed (optional)
1/2 c. crushed Hi Ho or cheese crackers
Salt and pepper to taste

Cook broccoli, set aside. Mix together everything except broccoli, ham and crumbs. Add broccoli and ham, mix well. Place in buttered casserole. Sprinkle crumbs on top. Bake at 350 degrees for 60 minutes. No cover - 2 quart casserole or 9 x 13 inch glass dish.
