MEXICAN CORN BREAD 
3 c. self-rising meal
3 tbsp. sugar
2 c. buttermilk
1 c. Wesson oil
4 pickled Jalapeno peppers
1 tsp. salt
1 tsp. baking soda
3 tbsp. flour
1 can cream style corn
1 1/2 c. grated Cheddar cheese
3 eggs
2 onions, chopped
1 lb. ground beef, browned with onion & pepper
1/2 pod bell pepper, chopped

Mix meal, salt, flour, soda, milk, eggs and peppers. Pour 1/3 of mixture in pan. Put one layer of corn, layer of ground beef and 1 layer of cheese. Pour rest of corn & meat mixture over top. Bake 45 minutes at 400 degrees.
