QUICK RICE PUDDING 
1 (3 1/8 oz.) pkg. vanilla pudding & pie filling mix
2 1/2 c. milk
1/2 c. uncooked instant rice
1/4 c. raisins
1/4 tsp. ground nutmeg
Ground nutmeg (optional)

Place pudding mix in 1 1/2 quart casserole. Gradually blend in milk. Stir in rice, raisins and 1/4 teaspoon nutmeg. Microwave at High for about 8 minutes, or until mixture thickens, stirring 2 or 3 times. Refrigerate for about 30 minutes. Stir. Sprinkle with nutmeg. Chill.

CHOCOLATE RICE PUDDING:

Follow recipe above, substituting chocolate pudding mix for vanilla pudding mix. Omit nutmeg.

Since microwave ovens vary in power, you may need to adjust your cooking time.
