GREEN TOMATO RELISH | |
1 peck of green tomatoes (8 qts.) 1/4 c. salt 1 med. green cabbage 6 green bell peppers 5 red bell peppers 3 to 4 med. onions 1 stalk celery Several green & red "hot" peppers 1 1/2 qts. vinegar 3 c. sugar 2 tbsp. mustard seed 1 tbsp. whole cloves 2 tbsp. celery seed Grind the tomatoes, cabbage, peppers, onions, celery; then add the salt. Drain all ingredients overnight in an old pillow slip. After this drains mix together in a large dish pan. Add the vinegar, sugar and spices. bring to a boil and cook for 2 hours. Put into sterilized jars and seal. Makes 15 pints. |
