WILTED MANDARIN SALAD 
SALAD:

1 head Romaine lettuce
1 c. diced celery
1 grated carrot
2 green onion, chopped
1/2 c. toasted slivered almonds
1 can mandarin oranges, drained

DRESSING:

1/2 tsp. salt
Dash of pepper
2 tbsp. sugar
2 tbsp. white vinegar
1/4 c. salad oil
Dash of cayenne pepper
Dash of parsley

Tear lettuce into bite-size pieces. Add celery, carrot, green onions and mandarin oranges. Mix dressing ingredients. Pour over salad. Toss lightly. Cover tightly and refrigerate overnight.

Before serving, add toasted almonds and toss again. If this sits too long, the almonds will get soft but this doesn't change the taste!
