RICE DRESSING (CHRISTMAS) 
3/4 stick butter
1 green pepper, chopped
1 onion, chopped
1/2 c. diced celery
1 c. rice
1 can water chestnuts, drained and sliced
1/4 tsp. salt
2 cans beef consomme
Pepper to taste
1 tsp. Italian seasoning
14 oz. can mushrooms
1 tsp. parsley

Melt butter over low heat; add green pepper, onion and celery. Cook for about 10 minutes. Add remaining ingredients; pour into casserole. Bake for 1 hour in 350 degree oven. Yield: 6 servings.
