TADPOLE-IN-A-HOLE 
Short ening
1 egg
1 (12 oz.) can vacuum packed whole kernel corn
1 (4 oz.) pkg. (1 c.) shredded cheddar cheese
1 (7 or 8 1/2 oz.) pkg. corn muffin mix
1 (5 1/2 oz.) pkg. sm. smoked sausage links

1. Turn the oven to 400 degrees. Put some shortening on a piece of paper towel or waxed paper. Spread the shortening over the bottom and sides of a 8"x8"x2" baking dish or pan to grease it.

2. Crack the egg into a mixing bowl. With a fork beat the egg until the yolk and the white are mixed.

3. Add undrained corn and half of the cheese to the egg. Mix well with a wooden spoon. Add the dry muffin mix. Stir until the dry ingredients are wet. (The batter will be thick.)

4. Spoon the batter into the baking dish. With a rubber scraper, scrape the batter from the bowl into the dish.

5. With a scissor, cut open the package of sausages. With paper towels, pat dry the sausage links. Arrange sausage links on top of the batter.

6. Put the dish into the oven. Bake about 30 minutes or until the top is golden. With hot pads, remove the baking dish from the oven. Turn off oven.

7. Sprinkle with the remaining cheese. Let stand 5 minutes before serving. Cut into squares. With a pancake turner, lift the squares from the baking dish. Makes 4 servings.
