BLUEBERRY (OR CHERRY) PUDDING | |
2 c. sugar 2 1/4 tbsp. shortening (vegetable) 2 eggs 1 c. milk 4 c. flour 1 tsp. salt 2 tsp. baking powder 2 c. sour cherries or blueberries (or 1 quart) 1 tsp. vanilla Clean berries and shake flour over them (set aside). Cream shortening and add sugar, add beaten eggs. Sift flour with baking powder and salt. Alternate flour mixture with milk and fold into creamed mixture. Add vanilla. Fold berries into batter. (Batter will seem sticky.) Bake at 350 degrees for 40 to 45 minutes. Test with toothpick in center to be sure it is done. This is delicious served warm. It can be served with milk. |
