TUNA LUNCHEON SALAD 
1 lg. can tuna (Albacore is best)
1 can garbanzo beans
1/4 c. finely chopped celery
1/4 c. shredded carrot
2 tbsp. finely chopped onion
1 can sliced water chestnuts
1/2 c. mayonnaise
1 tbsp. lemon juice
Salt & fresh green pepper

Flake tuna in mixing bowl. Rinse beans. Combine all ingredients, mixing lightly so beans are not crushed. Serve on lettuce leaf with toasted Parmesan cheese bread. Additional ingredients to taste: toasted sesame seeds, capers, garlic, toasted almonds.
