ZUCCHINI CASSEROLE 
2-3 c. cooked chicken
1 can cream of chicken soup
3 c. shredded zucchini
1 can water chestnuts, chopped
1 shredded carrot
1/2 c. chopped onion
1/4 c. melted butter
1/2 c. sour cream
1 sm. box Stove Top Stuffing

Combine first eight ingredients, then add to stuffing mix. Place in greased casserole. Bake at 350 degrees for 1 hour.
