CARROT RAISIN NUT SALAD | |
4 lg. or 8 sm. carrots 1/2 c. seedless raisins 1/2 c. chopped pecans or peanuts 3/4 tsp. salt 1 c. sour cream 2 tsp. grated lemon peel 1 tbsp. lemon juice Wash the carrots and place them on ice for an hour. Grate coarsely into a bowl. Add all the other ingredients, except the sour cream and mix together lightly. Place salad in a bowl and pour the sour cream over it. Toss salad lightly if you desire. |
