POTATO ROLLS 
1 pkg. dry yeast
1/4 c. sugar
2 tsp. salt
1/2 c. warm water
2 eggs
2/3 c. shortening, melted
1 c. milk, scalded
1 c. mashed potatoes
5 c. flour

Place yeast, salt and sugar in mixing bowl. Add water and mix 3 minutes or until yeast is bubbly. Add eggs and mix 3 minutes. Cool milk and shortening to lukewarm and combine with potatoes. Add to yeast mixture. Add flour, one cup at a time, mixing well. Place dough on floured board and knead. Return to bowl, brush with butter and cover with towel. Let rise 1 hour. Shape into desired rolls and place on greased pan. Brush with melted butter and let rise until double. Bake at 400 degrees for 15 to 20 minutes. Brush again with melted butter after removing from oven. Serves 32.
