KANSAS CITY SALAD 
1 head cauliflower
1 bunch broccoli tops
6 scallions, including tops
10-oz. pkg. frozen peas, thawed
1/2 c. sour cream
1/2 c. mayonnaise
1 tbsp. horseradish
Salt and pepper to taste

This salad should be prepared several hours or a day in advance. Red onion rings can be substituted for the scallions for color.

Cut cauliflower, broccoli and scallions into small pieces and toss with peas.

Stir dressing ingredients until blended. Mix with the vegetables and refrigerate. Serves 8 to 10.
