SEAFOOD GUMBO 
7 lb. shrimp
2 cans crab meat
6 lg. crabs
1 lg. bag frozen cut okra
1/2 lb. mild pork sausage
2 (15 oz.) cans tomatoes
2 (6 oz.) cans tomato paste
Gumbo file
2 lg. chopped onions
3/4 c. oil
1 tbsp. black pepper
8 qt. water
5 bay leaves
2 chopped bell peppers
3 ribs celery, chopped
1 tsp. CREOLE seasoning
3 pods chopped garlic
Liquid crab boil season to taste

Make roux with oil, flour and oil drippings of sausage. Stir in onions, bell pepper, and garlic. In large pot add water, salt, pepper, bay leaves, crab boil, pepper and Creole seasoning. Add celery, tomatoes, tomato paste. Simmer 2 hours. Add peeled shrimp, crab meat, large crabs, okra and sausage. Simmer 30 minutes. Add gumbo file 1 minute before you turn off heat. Remove bay leaves. Serve over cooked rice.
