PAT'S KENTUCKY BUTTER CAKE | |
1 c. butter 2. sugar 4 eggs 3 c. flour 1 tsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 1 c. buttermilk 2 tsp. vanilla Cream together butter and sugar, adding gradually. Add eggs, one at a time, beating well after each egg. Sift together flour, baking powder, salt, and baking soda. Combine buttermilk and vanilla. Add alternately with dry ingredients to creamed mixture. Blend well after each addition using the low speed of mixture. Turn into a 19 inch tube pan, greased on the bottom. Bake at 325 degrees for 60-90 minutes until cake springs back when touched in the center. Run knife or spatula along the outside edge and stem of pan. Prick cake with fork and pour hot sauce over cake. Cool completely before removing from the pan. SAUCE: 1 c. sugar 1/4 c. water 1/2 c. butter Heat until butter is melted and add 1 tablespoon vanilla or rum extract. This recipe was given to me about 10 years ago by Pat Fox and has become a real favorite of ours. |
