CHOCOLATE CHEESECAKE | |
1 c. cornflake crumbs 1/2 c. sugar 1 c. semi sweet morsels 2 pkgs. (8 oz.) cream cheese, room temperature 3/4 c. sugar 1/2 c. sour cream 4 extra large eggs or 5 large eggs 1/3 c. butter, melted Dash of cinnamon 1/4 c. rum 1 tbsp. vanilla Take a nine inch springform pan and cover the outside with heavy duty foil, shiny side on the outside. Butter sides and bottom of pan. CRUST: Combine the crumbs, 1/2 cup sugar and melted butter. Press the mixture on the sides and bottom of pan. Refrigerate. FILLING: Melt the chocolate with the rum over hot (not boiling) water. Put the cream cheese in bowl and beat until fluffy, gradually beat in sugar, sour cream, and vanilla. Add the eggs one at a time, beating well after each addition. Pour 1/2 the batter into a second bowl and add the chocolate mixture, blend well. Pour into prepared pan, add the "clear" batter. With a fork, make swirls in the combined batters. Bake in a preheated 350 degree oven for 50 minutes. Remove from oven, place on cooling rack, when cool remove sides of pan and refrigerate overnight. |
