CRANBERRY CARROTS 
4 c. (1 lb.) thinly sliced carrots
1 tbsp. butter
1 c. fresh raw cranberries
2 tbsp. brown sugar
1 tsp. grated orange rind
1 tbsp. pancake or maple syrup

Combine carrots and butter. Microwave on high 7 minutes stirring once. Stir in cranberries, sugar, orange rind, syrup and microwave 5 minutes on high. Stir and let stand 2-3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
