VEGETABLE BEAN SOUP | |
2 lb. navy beans 1 meaty hambone 1 clove garlic 1 sm. bay leaf 1 c. cubed potatoes 1 c. finely chopped onion 1 c. thinly sliced carrots 1 c. diced celery Salt and pepper as desired Soak the beans overnight. Simmer beans for 20 minutes in 2 1/2 quarts water. Let stand for 1 hour. Add ham bone, garlic and bay leaf. Cover and simmer 2 hours. Add the vegetables, season and cook 1 hour more or until done. |
