DOUBLE CRISPY CHICKEN | |
7 c. corn flakes, crushed to 1 3/4 c. 1 egg 1 c. milk 1 c. all-purpose flour 1/2 tsp. salt 1/4 tsp. pepper 3 lbs. frying chicken pieces, rinsed & drained 3 tbsp. butter, melted Measure crushed corn flakes into shallow dish or pan. Set aside. In small mixing bowl, beat egg and milk slightly. Add flour, salt and pepper. Mix until smooth. Dip chicken in batter. Coat with crushed cereal. Place in single layer, skin side up in greased or foil lined shallow baking pan. Drizzle with melted butter. Bake at 350 degrees for about 1 hour or until chicken is tender. Don't cover pan or turn chicken while baking. Yield: 6 servings. |
