TURKEY ROLLS 
6 to 8 turkey cutlets, about 1 lb.
1/3 to 1/2 c. coarse bread crumbs
1/2 tsp. oregano, or to taste
1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
2 oz. Feta cheese or Blue cheese, crumbled
1/4 c. finely chopped onions
1/4 tsp. pepper
1 to 2 tbsp. melted butter, or vegetable oil. (I used butter)

Dry cutlets on paper towel. Combine crumbs and oregano. Set aside. Combine spinach, cheese, onion and pepper. Spread mixture on 1 side of each cutlet and roll up. Brush with butter, roll in crumb mixture. Arrange turkey rolls, seam side down, in single layer on lightly greased baking or non stick cookie sheet. Place in freezer for 10 minutes (or in refrigerator for 1 hour). Preheat oven to 400 degrees. Bake rolls 10 to 15 minutes or until meat is no longer pink. Makes 3 to 4 servings. Enjoy!!!
