TACO SALAD 
1 lb. ground turkey
1 env. taco seasoning
1 (24 oz.) low fat cottage cheese
1 env. ranch dressing mix
1 chopped onion
1/2 c. chopped celery

Saute onion and celery in 2 tablespoons olive oil. Add turkey and break up with fork, cook until browned. Add taco seasoning and 1/2 cup water, simmer 15 to 20 minutes. Pour into 9 x 13 inch pan. Cream cottage cheese in blender. Add ranch dressing mix and spread over turkey. Add layer of shredded lettuce, onion rings, green pepper strips and chopped tomatoes. Sprinkle with low fat shredded cheese. Drizzle with low fat ranch dressing.
