2 c. sugar
1 1/2 c. cooking oil
3 eggs
3 c. self-rising flour
1 tsp. salt
1 tsp. baking soda
3 c. apples, peeled & cut sm.
1 c. pecans
1 c. coconut
1 tsp. vanilla extract

Mix sugar, oil and eggs. Sift flour, salt and soda; add to sugar mixture. Mix well. Add apples, nuts, coconut and vanilla. Pour into greased tube pan and bake for 1 hour and 20 minutes at 325 degrees.
