JEN'S CHEESY GARDEN SPECIAL
LUNCH
 
1 sm. summer squash
1 sm. tomato, diced
1 tsp. soy sauce
1 sm. onion, chopped
1 tsp. oil
1 slice cheddar cheese

Saute quarter slices of squash with onion in oil, until squash is soft. Sprinkle with soy sauce. Add diced tomatoes and cheddar cheese. Stir until cheese is half melted. Serve at once.

Variation: Chunks of leftover meat, poultry or shrimp are a nice addition.
