MARINATED SHRIMP 
2 lb. shrimp shelled and deveined
Boiling water
1 c. fresh lime juice
2 tsp. salt
1/4 c. fresh pepper
1 tsp. red pepper
2 or more bay leaves
1 red onion, sliced and separated into rings (about 1 cup)

Cook shrimp in pot of boiling water 3 to 4 minutes or until pink and firm. Drain and cool under cold water. Drain well in large plastic bowl. Mix lime juice, salt, pepper, leaves and onions. Add shrimp and mix. Cover and chill overnight. Discard by leaves. Serves: 12.
