BUTTER NUT COCONUT BARS 
1/3 c. butter
3/4 c. light brown sugar
1 egg
1 tsp. vanilla extract
2/3 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
3/4 c. flaked coconut
1/2 c. chopped walnuts

In a saucepan, melt the butter. Remove from heat. Stir in sugar. Beat in the egg and vanilla, then the flour, baking powder an salt. When smooth add the flaked coconut and walnuts. Spread in a greased baking pan, 8 x 8 x 2 inches. Bake at 350 degrees for 30 minutes. Cool in pan. Cut into small bars before removing to tightly covered container to store. Sprinkle with powdered sugar (optional).
