RHUBARB PUDDING 
3 c. rhubarb (cut up)
1 1/2 c. sugar
1 egg
1 tsp. baking powder
1 c. flour
1/8 tsp. salt
1 tbsp. butter
Milk

Mix rhubarb with 1 cup of sugar and put into baking dish which has been buttered. Dot with butter. Make a batter of 1 egg, 1/2 cup sugar, 1 teaspoon baking powder, 1 cup of flour, salt and enough milk for consistency of medium batter. Pour over rhubarb and bake for 30 minutes in 425 degree oven. Serve hot or cold. Makes about 6 servings.
